What we set out to create was a “whole-grain mustard” that everyone—from adults to children—can enjoy!
To make it pair well with any dish, we reduced the sharp smell and taste of vinegar as much as possible, bringing out sweetness and refreshing notes within the acidity. Simply mixing in “sweetness” alone would dilute the true savory flavor of whole-grain mustard, leaving only a sweet-and-sour taste.
So we added “honey” to provide naturally derived sweetness, giving the sweetness more depth.
But what would be best to add that refreshing quality…?
After much trial and error, we landed on “lemon peel” as the key to adding freshness.
The refreshing zing of “lemon” rushes through your mouth, layering with the sweetness of “honey” and the texture of “whole-grain mustard,” resulting in a truly delicious product that goes with any dish!

We solved it by switching from a jar to a “tube type”!

It pairs exceptionally well with white fish such as sea bream—each bite spreads the umami of the fish and the lemon mustard throughout your mouth.
